How to make Welsh Faggots.


For the Gravy:

  • 4 tbsp unsalted butter
  • 1 large yellow onion, thinly sliced
  • 1 tbsp flour
  • 2 cups beef stock
  • 13 cup madeira wine
  • 12 tsp Worcestershire sauce
  • Salt
  • Freshly ground black pepper

For the Meatballs:

  • 10 slices bacon, finely chopped
  • 1 lb ground pork
  • 4 oz pig’s liver, finely chopped
  • 1 tbsp finely chopped sage
  • 12 tsp finely chopped thyme
  • 1 small yellow onion, finely chopped
  • Salt
  • Freshly ground black pepper
  • 12 cups bread crumbs
  • 12 cup milk
  • 14 tsp freshly grated nutmeg
  • 12 cup dry white wine


  1. Make the onion gravy by melting the butter in a 4-qt. saucepan over medium-low heat.
  2. Add onion and cook, stirring occasionally, until golden brown, for about 40 minutes.
  3. Stir in flour and cook for 2 minutes.
  4. Add stock, madeira, Worcestershire, salt, pepper and bring to a boil.
  5. Cook until slightly thick, for about 5 minutes.
  6. Set gravy aside and keep warm.
  7. Now it´s time to make the meatballs.
  8. Heat oven to 350F.
  9. Heat bacon in a 12″ skillet over medium-high heat and cook until the fat is rendered and the bacon is slightly crisp, for around 4–6 minutes.
  10. Add the sage, thyme, onion, salt, pepper and cook, stirring occasionally, until golden, for about 7–9 minutes.
  11. Transfer to a bowl and let it cool down.
  12. Add pork, liver, bread crumbs, milk, nutmeg, salt and pepper to bacon mixture and mix gently to combine.
  13. Form mixture into eight 4-oz. balls.
  14. Place in a 9″ x 13″ baking dish and add the white wine.
  15. Now bake, basting occasionally with pan juices, until cooked through, for about 25 minutes.
  16. Serve with the onion gravy, mashed potatoes and peas.
