Tomato & Basil Bruschetta

How to make a Tomato and Basil Bruschetta.

Ingredients: Serves 2-4

For the Topping:

  • 2 tomatoes, diced
  • 2 tsp fresh basil, chopped
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp balsamic vinegar
  • 3/4 tsp fresh oregano, chopped

For the Bruschetta:

  • 16 slices Italian bread
  • 1/2 cup Parmesan cheese
  • Olive oil
  • Garlic powder

Method:

For the Topping:

  1. In a large bowl, mix together all the topping ingredients.
  2. Leave in the refrigerator for 1-2 hours before using for best flavour.

For the Bruschetta:

  1. Pre-heat the oven to 450F.
  2. Place the bread slices on a baking sheet.
  3. Brush the bread slices with olive oil and sprinkle with the minced garlic to your liking.
  4. Toast the bread in the oven for 5 minutes until they begin to crisp.
  5. Top with 1-2 Tbsp of tomato topping and sprinkle with cheese.
  6. Return to the oven for 3-5 minutes to melt the cheese.
  7. Serve and enjoy!
