
How to make a Tomato and Basil Bruschetta.
Ingredients: Serves 2-4
For the Topping:
- 2 tomatoes, diced
- 2 tsp fresh basil, chopped
- 1 garlic clove, minced
- 1/4 tsp salt
- 1/4 tsp balsamic vinegar
- 3/4 tsp fresh oregano, chopped
For the Bruschetta:
- 16 slices Italian bread
- 1/2 cup Parmesan cheese
- Olive oil
- Garlic powder
Method:
For the Topping:
- In a large bowl, mix together all the topping ingredients.
- Leave in the refrigerator for 1-2 hours before using for best flavour.
For the Bruschetta:
- Pre-heat the oven to 450F.
- Place the bread slices on a baking sheet.
- Brush the bread slices with olive oil and sprinkle with the minced garlic to your liking.
- Toast the bread in the oven for 5 minutes until they begin to crisp.
- Top with 1-2 Tbsp of tomato topping and sprinkle with cheese.
- Return to the oven for 3-5 minutes to melt the cheese.
- Serve and enjoy!
