INGREDIENTS: (for 2 people)
2 Small tins of tuna (around 160g)
Fried tomato sauce
Red peppers in a jar
1: Hard boil the eggs and peel them.
2: Cut the eggs in half so that they are oval shaped and take out the yolks.
3: Save the yolk of 1 egg for later.
4: In a container put the tuna, the 5 egg yolks, 2 tablespoons of mayonaise, 2 tablespoons of fried tomato, a pinch of salt, a pinch of black pepper and mix well together.
5: Grab a teaspoon and scoop the above mixture so that you can stuff the eggs with it.
6: For decoration add a small slice of red pepper and an olive to each egg half and then sprinkle the saved yolk over them.
7: Put in the fridge for 30 minutes and then they are ready to eat.
8: Enjoy… This goes very well with some rustic bread!
