Squid & Prawns Casserole Recipe makes a delicious lunch which can be enjoyed with a glass of white wine and fresh crusty bread to dip in the delicious sauce. If when finished cooking, the sauce is not thick enough, then grab a couple of potatoes, mash them up and add them back in the pot. Another alternative to thicken up the sauce is to add a teaspoon of flour and stir well until you have a nice and thick sauce.
INGREDIENTS: (for 2 people)
200g Squid rings (fresh or frozen)
200g Prawns (fresh or frozen)
5 Fresh asparagus (cut into 1 inch pieces)
2 Large potatoes (cut into slices)
2 Garlic cloves (finely chopped)
1 Green pepper (finely chopped)
1 Fish flavoured stock cube (crumbled up)
1 Tbsp Yellow food colourant
10cl White wine
1: Grab a cooking pot, cover the base with olive oil and heat up. Add the garlic and pepper. Fry until near golden brown.
2: Add the fish stock cube, salt to your own liking, the yellow food colourant and stir.
3: Add the potatoes, wine and the water. Cover up and cook for around 30 minutes on medium to high heat.
4: Add the prawns, the squid rings and the asparagus. Cover back up and leave it to cook for another 10 minutes. When ready, remove from the stove and leave aside for 5 minutes before serving.
5: Enjoy… With a loaf of fresh crusty bread for dipping in the delicious sauce!
