Spicy Sausage Pasta

How to make a Spicy Sausage Pasta.

Ingredients: Serves 4-6

  • 750g thick gourmet beef sausages
  • 500g dried orecchiette pasta
  • 700g tomato pasta sauce
  • 1 large zucchini, diced into 1cm pieces
  • 1 cup grated pizza cheese
  • 1 tbsp extra virgin olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 tbsp tomato paste
  • 1/2 cup red wine
  • 2 cups Massel beef style liquid stock
  • 2 cups boiling water
  • Fresh flat-leaf parsley leaves, to serve

For the grated bread:

  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 1 long red chilli, finely chopped
  • 1 1/2 cups fresh coarse sourdough breadcrumbs
  • 1 lemon, zested

Method:

  1. Squeeze sausage meat from the casing and chop into 3cm pieces.
  2. Heat the oil in a large, deep (25cm base) flameproof frying pan over high heat.
  3. Add the onion.
  4. Cook, stirring for 3 to 4 minutes or until softened.
  5. Add the garlic and sausage.
  6. Cook, stirring for 3 to 4 minutes or until browned.
  7. Add the tomato paste.
  8. Cook, stirring for 1 minute.
  9. Add the wine.
  10. Bring to the boil.
  11. Add the tomato pasta sauce.
  12. Simmer for 5 minutes or until reduced slightly.
  13. Add the stock.
  14. Bring to the boil.
  15. Add the pasta and the boiling water and cover.
  16. Simmer for 10 minutes.
  17. Uncover and stir in the zucchini.
  18. Simmer, stirring occasionally for 4 to 5 minutes or until the pasta is tender.
  19. Season.
  20. Pre-heat the grill on medium-high heat.
  21. Sprinkle the cheese over the pasta.
  22. Grill for 5 minutes or until the cheese is golden and melted.
  23. Meanwhile make the grated bread by heating the oil in a medium frying pan over medium-high heat.
  24. Add the garlic and chilli.
  25. Cook, stirring for 2 minutes or until fragrant.
  26. Add the breadcrumbs.
  27. Cook, stirring for 3 to 4 minutes or until golden and crisp.
  28. Stir in the lemon zest.
  29. Serve the pasta sprinkled with the grated bread and parsley.
