Spicy Mushrooms & Chorizo is an ideal sidedish and also makes a great tapa! It is great along with steak and chips or with chicken and salad. If you are not a fan of hot food then you can always make it without adding the Cayenne peppers. Another great combination is to use bacon bits instead of chorizo, there are plenty of other meat options available, but if you are not a meat eater then excluding it from the recipe is also fine as you will be left with some hot and tasty mushrooms. The choice is yours!
INGREDIENTS: (for 2 people)
250g Button mushrooms
1 Chorizo (diced)
1 Garlic clove (sliced up)
3 Cayenne peppers (crushed)
10cl White wine
1: Place a frying pan on the stove, add 3 Tbsp of olive oil and heat up on maximum.
2: Add the whole button mushrooms, chorizo, garlic and stirfry for 5 minutes.
3: Add the crushed Cayenne peppers and sprinkle some parsley and salt. Continue stirfrying for 1 minute.
4: Add the wine and leave to boil for about 5 minutes or until you are left with a nice and thick sauce.
