Spicy Beef Stew

How to make a Spicy Beef Stew.

Ingredients: Serves 4-6

  • 2 lbs lean beef (preferably chuck roast)
  • 2 large onions, cut into wedges
  • 1 lb new potatoes, cut in half
  • 1 lb baby carrots
  • 1-1/2 tablespoons dried Italian seasoning
  • 2 teaspoons beef bouillon granules
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cans (11-1/2 ounces each) hot and spicy vegetable juice
  • chopped fresh parsley, for garnishing

Instructions:

  1. Cut beef into 1- to 1-1/2-inch cubes.
  2. Place in a 4-1/2-quart Dutch oven.
  3. Add onions, potatoes, carrots, italian dressing, beef granules, salt, pepper and cans of spicy vegetable juice.
  4. Bring mixture to a boil over medium-high heat.
  5. Cover and transfer to oven.
  6. Bake for 4 hours at 250F degrees.
  7. Take out of the oven.
  8. Garnish if desired.
  9. Serve and enjoy!
