Spanish Style Tomato Sauce

How to make a Spanish Style Tomato Sauce.


  • 1kg of tomatoes
  • 2 medium onions
  • 2 cloves of garlic
  • 7 fresh basil leaves
  • 2 tablespoons of fresh oregano
  • Salt
  • Pepper
  • Sugar
  • Olive oil


  1. Wash the tomatoes and herbs well.
  2. The entire process of blanching the tomatoes will be short, about two minutes, and you’re ready to peel them.
  3. Make a cross at the base of the tomatoes.
  4. Prepare a pot with boiling water and place them for a few minutes until you see that the skin opens.
  5. Then put them in a container with water and ice, and you can peel them easily.
  6. Take the tomatoes and chop them.
  7. Finely chop the onion and garlic.
  8. Also chop the herbs. 
  9. Place a pan with a little olive oil, add the garlic and onion and let them brown for a few minutes.
  10. Be careful not to burn the garlic.
  11. Add the tomato and stir, add a glass of water, the chopped herbs and season.
  12. Leave over medium heat for half an hour, check every 5 minutes and stir to prevent it from burning. 
  13. Let it cool, if you want you can process it with a blender, it will depend on how you like the texture.
  14. In the fridge you can keep it for 2 weeks, it would be optimal in an airtight container.
  15. The other alternative is to vacuum pack and the sauce would last about 8 months.
