
How to make a Spanish Style Tomato Sauce.
Ingredients:
- 1kg of tomatoes
- 2 medium onions
- 2 cloves of garlic
- 7 fresh basil leaves
- 2 tablespoons of fresh oregano
- Salt
- Pepper
- Sugar
- Olive oil
Method:
- Wash the tomatoes and herbs well.
- The entire process of blanching the tomatoes will be short, about two minutes, and you’re ready to peel them.
- Make a cross at the base of the tomatoes.
- Prepare a pot with boiling water and place them for a few minutes until you see that the skin opens.
- Then put them in a container with water and ice, and you can peel them easily.
- Take the tomatoes and chop them.
- Finely chop the onion and garlic.
- Also chop the herbs.
- Place a pan with a little olive oil, add the garlic and onion and let them brown for a few minutes.
- Be careful not to burn the garlic.
- Add the tomato and stir, add a glass of water, the chopped herbs and season.
- Leave over medium heat for half an hour, check every 5 minutes and stir to prevent it from burning.
- Let it cool, if you want you can process it with a blender, it will depend on how you like the texture.
- In the fridge you can keep it for 2 weeks, it would be optimal in an airtight container.
- The other alternative is to vacuum pack and the sauce would last about 8 months.
