INGREDIENTS: (for 4 people)

1 Kg potatoes

6 Eggs

1 Onion

Vegetable Oil





1: Finely slice the potatoes and onion.

2: Beat the eggs in a large bowl and add a pinch of salt.

3: Fill a large and deep pan with plenty of oil, between 1 and 2 litres and heat on high until hot.

4: Add the potatoes, onions and salt to taste, then deep fry until the potatoes are soft.

5: Drain the potatoes and onions and add them to the eggs and mix well.

6: Place a large frying pan with 2 tablespoons of oil on a medium heat stove.

7: When the oil is hot, add the mixed eggs, potatoes and onions to the pan and cook for 2 -3 minutes.

8: Get a large plate, turn it upside down and place it over the pan. Place one hand on the plate and the other on the pan handle and flip it over. Then slide the contents again to the frying pan for another 2 -3 minutes to cook the other side.

9: Repeat step 8 again so that when it is finally done, the nicer looking side is at the top, ready to serve.

10: This is an ideal summer dish when served with a salad. Enjoy…
