
How to make a Singapore Style Chicken Noodle Soup.
Ingredients: Serves 4
- 440g singapore style fresh noodles
- 400g leftover roast chicken meat, chopped
- 2 carrots, trimmed, peeled and diced
- 1 brown onion, finely chopped
- 4 cups chicken stock
- 1 tbs olive oil
- 2 celery sticks, thinly sliced
- 2 garlic cloves, crushed
- 2 tbs parsley (to garnish)
Method:
- Heat oil in a large deep saucepan over medium heat.
- Add onion, carrot, celery and garlic and cook for 8 minutes or until tender.
- Add stock and 3 cups of water.
- Stir until well combined and mixture comes to the boil.
- Add chicken and noodles.
- Cook for 2 minutes or until heated through.
- Ladle into bowls, top with parsley and serve.
