Shrimp Tacos

How to make Shrimp Tacos.

INGREDIENTS: 8 Tacos

For the Cilantro Lime Slaw:

  • 2 cups thinly sliced green cabbage
  • 1/4 teaspoon lime zest
  • Juice from 1 lime (about 2 tablespoons)
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

For the Shrimp Tacos:

  • 1–1/4 pounds medium shrimp, peeled and deveined
  • Juice from 1 lime (about 2 tablespoons)
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1 tablespoon olive oil
  • 8 flour tortillas (taco size)
  • 1/4 cup chopped fresh cilantro

INSTRUCTIONS:

For the Cilantro Lime Slaw:

  1. Toss together cabbage, lime zest, lime juice, honey, salt, pepper and cilantro in a bowl until combined.
  2. Cover and refrigerate.

For the Shrimp Tacos:

  1. Rinse shrimp and pat dry with paper towels. Place shrimp in a bowl and drizzle with lime juice. Gently toss to coat evenly. Sprinkle with taco seasoning and gently toss to coat evenly.
  2. Heat olive oil in a large skillet over medium high heat. Add shrimp to skillet and cook for approximately 1-1/2 to 2 minutes on each side, or until shrimp are cooked and have just turned pink on both sides. Remove from heat.
  3. Heat tortillas according to package directions.
  4. Assemble tacos by layering slaw, shrimp and cilantro. Top with your favorite toppings.
