Shrimp Saganaki Soup

How to make a Shrimp Saganaki Soup.

Ingredients: Serves 4

  • 1 pound shrimp
  • 1 cup feta, crumbled
  • 1 (28 ounce) can diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion onion, diced
  • 4 cloves garlic, chopped
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon fennel seeds, toasted and ground (optional)
  • 1 teaspoon oregano
  • salt, to taste
  • pepper, to taste

Directions:

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and cook until tender, about 3-5 minutes.
  3. Add the garlic, red pepper flakes and fennel seeds and keep cooking for another minute.
  4. Add the tomatoes, broth and oregano.
  5. Bring to a boil.
  6. Reduce the heat and simmer for 5 minutes.
  7. Add the shrimp and feta and simmer until the shrimp is cooked, about 3-5 minutes.
  8. Serve with fresh crusty bread and enjoy!
