Seafood Casserole

This delicious dish takes approximately 45 minutes to make from start to finish. You can buy half a kilo bags of mixed seafood, I get mine from Lidl, or if you wish, then you can buy it fresh from your local fishmongers. If you are cooking this recipe for 4 people then just add double the seafood and potatoes, also add say 1 litre of water or abit more, just make sure to cover the potatoes when cooking them.

INGREDIENTS: (for 2 people)

500g Mixed seafood

2 Large potatoes

1 Red pepper

1 Small onion

2 Garlic cloves

1 Fish flavoured stock cube

1 Tsp Yellow food colourant

Olive oil

Salt

70cl Water

 

 

INSTRUCTIONS:

1: Finely chop the onion and garlic. Cut the pepper into strips. Cut the potatoes into 1cm slices.

2: Cover the base of a cooking pot with olive oil and heat up on high. Add the garlic and onion. Fry for 5 minutes.

3: Add the potatoes, the fish stock cube, the food colourant and salt to your own liking. Add the water and boil on medium to high heat for 20 minutes.

4: Add the peppers and the seafood. Cover the pot with the lid, turn the heat down to medium and leave to cook for 15 minutes.

5: When ready, leave to one side for 5 minutes before serving.
