
How to make a Sausage and White Bean Chowder.
Ingredients for 4 servings:
- 4 slices bacon, sliced
- 1/2 pound andouille, kielbasa or other smoked sausage, sliced 1/4 inch
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 stalk celery, chopped
- 3 cups beef stock/broth
- 1 (16 ounce) can stewed or diced tomatoes, undrained and coarsely chopped
- 2 medium potatoes, peeled and diced
- 1 (15 ounce) can white beans, drained and rinsed
- 1/2 teaspoon chili powder
- 1/4 teaspoon kosher salt, or to taste
- 1/4 teaspoon freshly cracked black pepper
Instructions:
In 4 quart stock pot, sauté bacon until tender.
Add sausage and cook for 3 minutes.
Add onion, bell pepper and celery to drippings and cook another 3 minutes.
Add stock, tomatoes and potatoes; bring to a boil, reduce heat and simmer for 15 minutes.
Add beans, chili powder, salt and pepper, simmer for 5 minutes longer, or until potatoes are cooked through.
Taste and adjust seasonings.
