Roman Style Peas

How to make Roman Style Peas.

Ingredients: Serves 2-4

  • 450g/16 oz of frozen peas, or the equivalent in fresh, shelled peas
  • 4 slices of prosciutto, sliced into thin strips
  • 1/2 medium onion, finely chopped
  • Olive oil
  • Salt
  • Pepper


  1. Make a soffritto by sweating some finely chopped onion in olive oil until translucent.
  2. Add the prosciutto, cut across the grain into thin strips, and continue cooking just until the prosciutto has lost its raw look.
  3. Add the peas and stir.
  4. Allow the peas to cook and absorb the flavours of the soffritto.
  5. If using frozen peas, this will take no longer than five minutes, otherwise let the peas simmer until tender, for about 15-20 minutes.
  6. Season to taste with salt and pepper.
  7. Serve and enjoy!
