Rib Roast In Beer

Today I decided to roast this rack of ribs I bought last week in Lidl. It´s a 1Kg piece for just under €6 which I considered a bargain! Plenty of meat in it, enough for two to three hungry people alongside some very tasty roast potatoes which I like to boil for a few minutes before sticking them in the oven. I also made a sort of gravy using a couple of meat stock cubes and a bottle of San Miguel beer.

INGREDIENTS: (for 2 – 3 people)

1Kg Rack of pork ribs

2 – 3 Large potatoes

3 Garlic cloves

2 Meat flavoured stock cubes

1 Tsp Dried parsley

1 Tsp Sweet paprika

33cl Beer

Olive oil





1: Peal the potatoes and cut them into large pieces. Cut the garlic cloves into large slices.

2: Add the potatoes to a cooking pot, add a pinch of salt and cover with water. Boil the potatoes for 10 minutes then drain the water.

3: Grab a small cooking pot and cover the base with olive oil. Sprinkle in the stock cubes, add the parsley and sweet paprika. Add the beer and bring to the boil, keep boiling a few more minutes until the stock cubes have dissolved.

4: Grab a large oven dish and place the ribs in it, the bone part facing down, also add the potatoes. Then grab the pot of gravy that you just made and pour it evenly over the ribs and potatoes. Place in the middle part of the oven at 200c temperature and leave to roast for 1 hour. Then take the tray out and turn the potatoes over. Put back in the oven for another hour or when you feel that the ribs and potatoes are cooked to your own liking.
