This Quick Lentil Stew is very easy to make and takes no longer than 30 minutes from start to finish. Ideal to make the night before, store away in the fridge and heat up next day for a delicious meal accompanied with some fresh crusty bread!
INGREDIENTS: (for 2 people)
400g Jar of lentils (drain off the brine)
1 Chorizo (cut into slices)
1 Carrot (cut into slices)
½ Green pepper (finely diced)
200g Pork (cut into small pieces)
1 Potato (cut into small cubes)
1 Garlic clove (finely diced)
½ Tsp Sweet paprika
½ Tsp Salt
1: Cover the base of a cooking pot with olive oil. Add the garlic and pepper. Gently fry for 5 minutes.
2: Add the chorizo and pork. Continue to fry gently for 5 minutes.
3: Add the potato and carrot. Also add the sweet paprika, salt and water. Boil on high heat for 15 minutes. Then add the lentils and continue to boil for a further 5 minutes.
4: Leave aside for 5 minutes before serving.
5: Enjoy… With a loaf of fresh crusty bread for dipping!
