Portuguese Style Cod Burgers

How to make Portuguese Style Cod Burgers.

Ingredients: Serves 4

For the Cod burger:

  • 0.5 kg shredded cod
  • 1 ½ garlic clove
  • 4 mint leaves
  • 4 basil leaves
  • 0.5 tsp mustard
  • 1 egg yolk
  • 24 g grated bread
  • 0.5 tsp olive oil extra virgin

For the Onion Stew:

  • 0.5 tsp Olive oil extra virgin
  • 1 ½ garlic cloves
  • 160 g onion
  • 160 g peeled tomatoes
  • ½ star anise
  • 0.2 tsp red wine vinegar
  • fresh chilli

Method:

For the Cod Burger: 

  1. First soak the salted, dried cod for 12 hours and drain it.
  2. Then simmer briefly in plain water.
  3. Peel and slice the garlic.
  4. Place a frying pan over medium heat and let the garlic sweat in the pan for a minute.
  5. Chop the mint and basil leaves and mix well together all the ingredients for the burger.

For the Onion Stew:

  1. Chop the onion and the garlic and let them sweat in the olive oil in a medium hot frying pan.
  2. Add the red wine vinegar to the mixture and cook for 2 minutes.
  3. Add peeled tomatoes and let it cook for another 15 minutes.
  4. The cod burger goes great with bread buns and salad, topped with the onion stew.
