Pork Ribs Casserole is an easy to make and an ideal dish for the colder seasons. As with all my casserole recipes, they make great dishes for those that want a tasty homecooked meal without too many complications. They are also ideal if you want to cook them in larger size portions so that you can eat them a couple of days later. Just store it in the fridge and when you want to eat it, gently heat it up on the stove or microwave. As with all pork and chicken reheated dishes, make sure that it is well hot inside the meat!
INGREDIENTS: (for 2 people)
700g Rack of fresh pork ribs
2 Large potatoes
2 Garlic cloves
1 Small red pepper
1 Meat flavoured stock cube
½ Tsp Sweet paprika
½ Tsp Yellow food colourant
10cl White wine
1: Cut the ribs into individual pieces and deep fry in very hot oil for 5 minutes or until they are golden brown.
2: Cut the garlic into slices and add them to a large cooking pot with the base covered in olive oil. Fry until golden brown and then add the paprika, salt to your own liking, yellow food colourant and the meat flavoured stock cube.
3: Cut the potatoes into small cubes and add them to the pot along with the wine and water. Add the ribs and stir well so that everything is mixed in. Now cover the pot with the lid and leave to cook on medium heat for 45 minutes. Then add the red pepper cut into slices and leave to cook for a further 10 minutes. When ready, leave aside to rest for 5 minutes before serving.
4: Enjoy… The sauce is delicious for bread dipping!
