Pork In Tomato Sauce is an easy to make dish which can be great with boiled potatoes or plain white rice. It is also ideal if you want to make some extra portions so that you can keep them in the fridge for a couple of days and use them when you don´t have the time to cook.
INGREDIENTS: (for 2 people)
400g Pork (cut into small pieces)
400g Jar of fried tomato sauce
3 Garlic cloves
1 Small onion
2 Bay leaves
1: Place the pork pieces into a bowl, add 5cl of olive oil, salt, a sprinkle of parsley and the garlic cut into slices. Mix well and leave overnight in the fridge.
2: Cut the onion into slices.
3: Place a frying pan on high heat, add the pork and onions. Stirfry until all is golden brown.
4: Add the jar of fried tomato sauce and mix well. Turn the heat down to medium and leave to cook for 20 minutes. After that it is ready to serve with either rice or boiled potatoes.
