If you like Brussel sprouts then here is a delicious casserole recipe that you will enjoy. It is very easy to make and takes no more than 75 minutes including preparation time. The most common method of preparing Brussels sprouts for cooking begins with cutting the buds off the stalk. Any surplus stem is cut away, and any loose surface leaves are peeled and discarded.
INGREDIENTS: (for 2 people)
500g Brussel sprouts
300g Pork cut into bitesize pieces
1 Large potato
3 Garlic cloves
10cl White wine
1 Meat stock cube
1: Grab a cooking pot, cover the base with olive oil and heat up on medium to high heat.
2: Add the pieces of pork and start to fry them. Finely chop the garlic and add it to the pot too.
3: When the pork is nice and brown all over, crumble into it the stock cube, add salt to your own liking, add 1 tsp of sweet paprika and a sprinkle of parsley. Add the white wine and mix well. Boil for 5 minutes, then turn off the heat and cover with the lid. Leave the pot on the turned off heat area.
4: Prepare the Brussel sprouts by removing unwanted outer leaves and cutting off the stork.
5: Prepare the potatoes by cutting them into large cubes.
6: Turn the heat back up to medium – high and add the water. Boil for 15 minutes, then add the potatoes and Brussel sprouts and continue to boil for around 30 minutes or until the potatoes are soft, you can check by piercing them with a knife.
7: When ready leave to stand with the lid on for 5 minutes before serving.
