Pancetta and Padron Peppers Casserole is a delicious and very simple to cook dish.
INGREDIENTS: (for 2 people)
5 Thick slices of fresh pancetta (cut into bitesize portions)
20 Padron Peppers
2 Large potatoes (cut into small cubes)
1 Small onion (finely chopped)
2 Garlic cloves (finely chopped)
1 Red pepper (cut into slices)
½ Tsp Sweet paprika
½ Tsp Dried parsley
15cl White wine
3 Tbsp Fried tomato sauce
1 Meat flavoured stock cube (crumbled)
Salt (to your own liking)
1: Grab a cooking pot and cover the base with olive oil.
2: Add the onion, garlic and pancetta. Fry until golden brown.
3: Add the paprika, parsley, salt, tomato sauce and the stock cube. Mix well.
4: Put in the potatoes and then the wine and water. Mix well and cover with lid. Cook on medium heat for 45 minutes.
5: Then add the Padron peppers, the red pepper and continue to cook for a further 10 minutes. Leave to rest for 5 minutes before serving.
6: Enjoy… With a side salad and some crusty bread!
