Pancetta Casserole With Beer

INGREDIENTS: (for 2 people)

4 Thick slices of fresh pancetta

2 Large potatoes

150g Baby carrots

2 Garlic cloves

Olive oil

Yellow food colourant

Dried parsley

1 Meat flavoured stock cube

Salt

33cl Beer

30cl Water

 

 

INSTRUCTIONS:

1: Cut the pancetta into bitesize pieces.

2: Finely chop the garlic.

3: Cut the potatoes into bitesize cubes.

4: Cover the base of a medium sized cooking pot with olive oil and heat up on medium to high heat.

5: Add the pancetta and garlic. Fry until golden brown.

6: Crumble up the stock cube and add it to the pot. Add salt to your own liking. Add 1 tsp of dried parsley and 1 tsp of yellow food colourant. Add the beer and water. Add the potatoes and carrots. Stir well and cover with the lid. Cook on medium to high heat for 30 minutes. When done, leave to stand for 5 minutes before serving.
