Oven Baked Sausage Breakfast

How to make an Oven Baked Sausage Breakfast.

Ingredients: Serves 6-8

  • 1 lb sausages
  • 20 oz diced hash browns, thawed
  • 4 oz mild green chillies, drained
  • 1 red bell pepper, diced
  • 1 large onion, diced
  • 1 cup pepper jack cheese, shredded, divided
  • 1 cup cheddar cheese, shredded, divided

For the Egg Mixture:

  • 8 eggs
  • 1 ⅓ cups milk
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • salt, to taste
  • pepper, to taste


  1. Pre-heat the oven to 350F.
  2. Grease a 9×13 pan or a 3qt casserole dish.
  3. Cut the breakfast sausages into 4 pieces about ½-inch long.
  4. Place sausages in a large skillet and cook over medium-high heat until they are browned, for about 7-8 minutes.
  5. Add the onion to the pan and cook until the sausages are cooked through and the onion is softened, for about 3 minutes more.
  6. Drain any fat and set aside to cool.
  7. Place the sausage mixture, thawed hash browns, bell pepper, green chillies and half of each of the cheeses in the prepared pan.
  8. Stir to combine.
  9. Whisk the egg mixture in a large bowl until smooth.
  10. Pour over the hashbrowns.
  11. Bake covered for 40 minutes.
  12. Uncover, top with remaining 1 cup of cheese, and bake for an additional 30-35 minutes or until cooked through.
  13. Serve and enjoy!
