Olive Oil Mashed Potatoes

How to make Olive Oil Mashed Potatoes.

Ingredients: Serves 4

  • 1 1/2 lbs potatoes, cut into 2-inch pieces
  • 1 cup chopped green onions
  • 6 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt

Method:

  1. Put the potatoes, garlic and salt in a large saucepan.
  2. Pour in enough water to cover the potatoes.
  3. Bring to a boil over high heat.
  4. Boil for 15 to 20 minutes or until the potatoes are soft.
  5. Transfer the potatoes and garlic to a colander.
  6. Drain well.
  7. Return them to the pan.
  8. Using the tines of a fork, mash the potatoes and garlic, being sure to crush each piece of potato and each garlic clove.
  9. Add the green onions, oil and pepper, stirring until well combined.
  10. Serve and enjoy!
