Meatballs & Bacon Casserole is a delicious dish which is ideal for serving with rice or potatoes. It can also be left in the fridge for a couple of days and heated up in the microwave to make a quick meal. You can use frozen meatballs or fresh ones but if you are feeling a little adventurous then why not try making your own by following my homemade meatball recipe published on here.
INGREDIENTS: (for 2 people)
200g Bacon bits
1 Red pepper
1 Small onion
3 Garlic cloves
25cl White wine
1 Meat flavoured stock cube
2 Bay leaves
Yellow food colourant
1: Finely chop up the garlic and onion. Slice up the red pepper into thick rings.
2: Grab a cooking pot, cover the base with olive oil and heat up on maximum. Add the garlic, onion, meatballs and bacon. Stirfry for around 5 minutes or until everything is golden brown and then remove from the heat.
3: Sprinkle in the meat flavoured stock cube, add salt to your own liking, add the bay leaves, 1 tsp of yellow food colourant and the white wine. Bring to the boil and then turn down the heat to medium. Cover the pot and leave to cook for 30 minutes.
4: Remove the lid and add the red peppers. Place back the lid and continue to cook for 10 minutes then remove from the heat and leave to rest for 5 minutes before serving.
