Mango Habanero Chicken

How to make Mango Habanero Chicken.

Ingredients: Serves 4

  • 8 chicken thighs
  • 2 large, ripe mangoes
  • 1 habanero pepper, destemmed, deseeded and deveined
  • 1/4 cup honey
  • 1/2 cup apple cider vinegar
  • 1 cup water
  • salt, to taste
  • pepper, to taste

Method:

  1. Add salt and pepper to the chicken thighs.
  2. Roast at 400F for 25 minutes or until golden brown and just cooked through.
  3. To make the glaze add the rest of the ingredients into the saucepan.
  4. Cook on low for 15 minutes or until water has evaporated and the mangoes are soft.
  5. Remove the habanero and using a potato masher or whisk, mash the softened mixture.
  6. Raise the oven temperature to 425F.
  7. Coat the chicken in the sauce and put back in the oven for 5-7 minutes.
  8. Serve with rice and enjoy!
