How to make a Luxury Baked Salmon.
Ingredients: Serves 4.
2 Large Salmon Fillets (500 g/ 1.1lb)
10 Sun Dried Tomatoes.
1 Large Lemon.
2 Slices of Stale White Bread.
Extra virgin olive oil.
Salt and Pepper.
Put the sun-dried tomatoes in oil the night before.
Wash the lemon and cut in half.
Slice 2 thin slices from each half, and then cut the rest into small cubes.
Chop the sun-dried tomato into small pieces, and place in a bowl.
Add 2 tablespoons of chopped fresh basil.
Grate the stale bread into breadcrumbs, and add to the basil and tomatoes.
Add the beaten egg and combine all the ingredients into a paste, using a hand held blender will ease this task..
On a clean work surface.
Place one of the salmon loins, salted and with the skin underneath, on top of two lemon slices.
Smooth the paste over the salmon.
Cover with the other slice of salmon, with the skin on top, and place the other two lemon slices in it.
Tie with baking string and place in an oven proof dish greased with oil.
Sprinkle the rest of the lemon on top and drizzle with olive oil.
Put it in the hot oven, at 180 ºC/350f/ Gas 5 for 30 minutes.
Serve immediately with boiled potatoes.
