
How to make a Lobster Stew.
Ingredients: Serves 2
- 1 kg of lobster
- 1 litre of fish broth
- 1 medium onion
- 4 cloves of garlic
- 2 tomatoes
- 1 green bell pepper
- Salt, to taste
For Crushing:
- A handful of almonds
- 2 cloves of garlic
- 1 tablespoon brandy
- 1 slice of fried bread
- 1/2 red bell pepper
- Parsley, to taste
Method:
- Chop the onion, pepper, tomato and garlic into small cubes.
- Sauté everything in a pan with olive oil over medium heat for 5 minutes, taking care that it does not burn.
- When it is ready, pass the sauce through an electric grinder and reserve.
- In a large skillet, or a clay pot, sauté the lobster that you have previously chopped.
- Make sure that the head of the lobster cooks a few minutes longer than the rest of the body.
- Now add the sauce that previously went through the grinder and mix well with the juices that the lobster released when you were cooking it.
- Add the fish stock, mix a little and cook over medium heat for 10 minutes.
- Check the salt point in case you need more.
- Meanwhile you can prepare the crushing, which is as simple as mixing all the ingredients: almonds, garlic, fried bread, pepper, brandy and parsley.
- You can use a mortar to crush it well.
- Finally add the crushed mixture to the lobster stew, cook for another 5 minutes and remove from the heat.
- Serve and enjoy!
