Lentils With Ribs & Chorizo recipe is the perfect winter tummy warmer!
INGREDIENTS: (for 4 people)
400g Dried lentils (leave in water overnight)
2 Chorizos (cut into bitesize pieces)
400g Pork ribs (cut into bitesize pieces)
2 Large potatoes (cut into bitesize cubes)
3 Garlic cloves
1 Green pepper
1 Tsp sweet paprika powder
1: Chop the garlic and pepper into very small pieces.
2: Grab a large cooking pot and cover the base with olive oil. Heat up and add the garlic and pepper. Gently fry on medium heat until golden brown. Add the sweet paprika, salt to your own liking and mix well.
3: Add the ribs, chorizos, potatoes and lentils. Add the water, cover with the lid and leave to cook on medium to high heat for around 90 minutes. To thicken up the juice grab a few of the boiled potatoes, mash them up and add them back into the pot.
4: Leave aside for 5 minutes before serving.
5: Enjoy… With a loaf of fresh crusty bread for dipping!
