A couple of days ago I had boiled pork knuckle for dinner and as it was a piece that was around 1.2kg I had some leftover, so instead of throwing it away, which I really hate, I created this delicious casserole with it, which takes just an hour to make and uses some basic ingredients that everyone should have in their kitchen, I hope you like it.
INGREDIENTS: (for 2 people)
300g Leftover pork or any other leftover pork meat
2 Large potatoes
3 Garlic cloves
75g Frozen peas
75g Frozen carrots
1 Tsp Sweet paprika
1 Tsp Dried parsley
1 Tsp Yellow food colourant
1 Meat or vegetable flavoured stock cube
30cl White wine
1: Cut the pork meat into small pieces, cut the potatoes into large cubes, finely chop the onion and garlic.
2: Cover the base of a cooking pot with olive oil and heat up. Add the garlic, the onion and gently fry for 3 minutes, then add the pork and continue frying for 5 minutes.
3: Add the potatoes, the peas and carrots, the sweet paprika, parsley and food colourant, sprinkle in the stock cube, add salt to your own liking, also add the wine and the water. Stir well, turn the heat to medium – high, cover with the lid and leave to cook for 30 minutes.
4: After the 30 minute cooking time is over, remove the lid and stir well. Cover back with the lid and continue to cook for a further 20 minutes on medium heat.
5: When ready, remove from heat and leave aside to rest for 5 minutes before serving.
6: Enjoy… With some crusty bread to dip in the delicious juice!
