Leftovers Chicken Broth is a great recipe for when you have some chicken leftover from a previous meal, ie: roast chicken.

INGREDIENTS: (for 4 people)

300g Leftover cooked chicken (cut into small pieces)

1 Large potato (cut into large cubes)

1 400g jar of chick peas

2 Carrots (cut into bitesize pieces)

2 Garlic cloves (sliced)

50g Fine noodles

3 Tbsp Olive oil

Salt (to your own liking)

1 Cube of chicken gravy (crumbled)

½ Tsp Yellow food colourant

1.5L Water

 

 

INSTRUCTIONS:

1: Grab a large cooking pot and add the olive oil.

2: Add the garlic and gently fry until golden brown.

3: Add the stock cube and mix well. Add the chicken, carrots, potatoes, yellow food colourant and the water. Mix well and boil on medium to high heat for 20 minutes.

4: Then add the chick peas and continue to boil for a further 5 minutes.

5: Lastly add the noodles and leave to boil for another 5 minutes.

6: Then leave aside to rest for 5 minutes before serving.

7: Enjoy… Ideal with crusty rustic bread to dip in!
