Leeks With Orange, Ham & Hazelnuts

How to make Leeks With Orange, Ham & Hazelnuts.

Ingredients: For 2 People.

6 Thin leeks, without the green part.

The Peel of 1 Orange,and another ½ of an orange to grate at the end.

100 grams/ 3.5oz of good quality cured meat

1/2 Teapoon of Dried Rosemary.

1/2 Teaspoon of Dried Thyme.

1 Garlic Glove, crushed.

Chopped Fresh Parsley, 1 Tablespoon.

20 Hazelnuts.

Olive oil and Extra Virgin olive oil.

Shavings of a Hard Cheese for decoration.

Salt and Pepper.


Clean the leaks, by rinsing under cold water and removing the top layer. Cut of the green parts so just the white remains.

Place in a saucepan with just enough water to cover.

Add the oil, orange peel, and herbs.

Season with salt and pepper and cook over low heat for about 20 minutes, until soft.

Meanwhile bash the hazelnuts, gently just so they half.

After 20 minutes remove the leeks from the heat and drain.

Heat a couple of tablespoons of olive oil along with the garlic in a frying pan.

Saute the leeks until golden, a coupleof minutes.

Arrange the leeks on a serving dish.

Roll pieces of the cured ham on top.

Sprinkle the hazelnuts over.

Then add some shavings of hard cheese on top.

Drizzle some extra virgin olive oil over.

Finally sprinkle the grated orange peel and chopped fresh parsley over and serve immediately.
