Gypsy Pot Stew

How to make a Gypsy Pot Stew.

Ingredients: Serves 4

  • 500 g of chickpeas
  • 4 potatoes, cut into cubes
  • 1 tomato, grated
  • 1/2 onion
  • 80g green beans 
  • 100g pumpkin, cut into cubes
  • 1 sachet of saffron
  • 1 tablespoon paprika
  • 5 mint leaves, minced
  • 4 tablespoons olive oil
  • Salt to taste

Method:

  1. Start by soaking the chickpeas in a bowl of hot water the night before.
  2. The next day, change the water and put them in a pot to cook for 20 minutes together with the sachet of saffron.
  3. Cube the potatoes and the pumpkin and add it to the chickpeas after that time.
  4. Add salt to your own liking.
  5. Continue cooking over medium heat.
  6. In a frying pan, put the 4 tablespoons of oil and add the finely chopped onion and let it poach.
  7. Add the grated tomato along with a tablespoon of paprika.
  8. Incorporate it into the chickpeas.
  9. Peel the beans, removing the ends and threads.
  10. Cut them into small pieces and add them to the whole mixture.
  11. Let cook until everything is very tender, taste to see if it needs more salt and at the end add the minced mint just before serving.
