
How to make Grilled Razor Clams.
Ingredients: Serves 2
- 500 g razor clams
- 2 cloves dried garlic
- 1/2 lemon
- extra virgin olive oil
- coarse salt
- fresh parsley
Method:
- Clean the razor clams by taking a long and tall container so that they remain vertical.
- Place them with a tablespoon of coarse salt and fill with water.
- Leave them like this for at least 2 hours so that they release any impurities and especially the sand, keep in mind to change the water when an hour has passed.
- After the time has passed, drain them and wash them well under running water to remove any salt and sand that may have remained.
- Wash the parsley leaves and cut them finely.
- Peel the garlic and chop it into fine slices.
- Put a griddle at high temperature with a splash of olive oil.
- First place the coarse salt and the garlic and let it brown for a minute, taking care not to burn it, after that time we must lower the heat.
- Add the razor clams and cook them for a few minutes.
- When they open, turn them so that the meat is in contact with the pan and cook for a minute.
- Turn them over again and add lemon on top, leaving them for another minute.
- Remove from the griddle and sprinkle chopped parsley and more olive oil on top.
- Serve and enjoy!
