Greek Style Roast Pork

How to make Greek Style Roast Pork.

Ingredients: Serves 4-6

  • 1 1/2 kg boneless pork loin
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh or dried rosemary
  • 1 kg small potatoes
  • 1/2 kg small white onions
  • 2 carrots
  • salt
  • pepper


  1. Pre-heat the oven at 200C degrees.
  2. Salt and pepper the meat.
  3. Add half of the amount of olive oil and 1/2 spoon rosemary and rub the meat.
  4. Place on oven pan and roast for 1/2 hour.
  5. In the meantime, clean and peel the potatoes, onions and carrots.
  6. Cut the potoatoes into quarters.
  7. Cut the onions and carrots into thick slices.
  8. In a large bowl mix the vegetables with the remaining olive oil and rosemary.
  9. Salt lightly and pepper.
  10. After the first half hour, remove the pan from the oven, place neatly round the meat, potatoes, onions and carrots.
  11. Place the pan back in the oven and let it roast for 1 1/2 hours more.
  12. When done, transfer the pork to a cutting board, cut into slices and serve with the vegetables.
