
How to make Greek Style Roast Pork.
Ingredients: Serves 4-6
- 1 1/2 kg boneless pork loin
- 1/4 cup extra virgin olive oil
- 1 tablespoon fresh or dried rosemary
- 1 kg small potatoes
- 1/2 kg small white onions
- 2 carrots
- salt
- pepper
Method:
- Pre-heat the oven at 200C degrees.
- Salt and pepper the meat.
- Add half of the amount of olive oil and 1/2 spoon rosemary and rub the meat.
- Place on oven pan and roast for 1/2 hour.
- In the meantime, clean and peel the potatoes, onions and carrots.
- Cut the potoatoes into quarters.
- Cut the onions and carrots into thick slices.
- In a large bowl mix the vegetables with the remaining olive oil and rosemary.
- Salt lightly and pepper.
- After the first half hour, remove the pan from the oven, place neatly round the meat, potatoes, onions and carrots.
- Place the pan back in the oven and let it roast for 1 1/2 hours more.
- When done, transfer the pork to a cutting board, cut into slices and serve with the vegetables.
