Greek Spetzofai

How to make a Greek Spetzofai.

Ingredients: Serves 2-4

  • 250 g spicy country style pork sausages, sliced
  • 1 medium size white onion, finely chopped
  • 2 red peppers, rougly chopped
  • 2 green peppers, rougly chopped
  • 3 ripe tomatoes, chopped
  • 1 tablespoon tomato paste
  • 40 g extra virgin olive oil
  • 1 teaspoon sugar
  • 1 glass white dry wine
  • hot water
  • salt
  • pepper


  1. In a large saucepan heat the olive oil over medium heat.
  2. Sauté the sausages for 4-5 minutes.
  3. Add the onion and sauté for another 3-4 minutes.
  4. Add the wine and let it evaporate.
  5. Add the tomatoes, peppers, sugar, salt, pepper, tomato paste and about a cup of water.
  6. Give it a stir and let it simmer for at least half an hour or until the sauce thickens.
  7. Serve and enjoy!
