Greek Lemon Chicken Soup

How to make a Greek Lemon Chicken Soup.

Ingredients: Serves 4

  • 1/2 cup arborio rice
  • 2 cups cooked chicken
  • 3 eggs, lightly beaten
  • 1 onion, diced
  • 1 tablespoon oil
  • 6 cups chicken broth or chicken stock
  • 2 lemons, juice and zest
  • fresh parsley, finely chopped
  • salt, to taste


  1. Heat the oil in a pan over medium-high heat.
  2. Add the onions and cook until tender, for about 3-5 minutes.
  3. Add the chicken broth and rice, and bring to a boil.
  4. Reduce the heat and simmer until the rice is cooked al-dente, for about 15-20 minutes.
  5. Slowly pour 1 cup of the hot broth into the eggs while whisking and then slowly whisk the egg mixture into the soup.
  6. Add salt to your own liking.
  7. Add the chicken, lemon juice and zest and cook to warm, for about 5 minutes.
  8. Serve sprinkled with some finely chopped parsley and enjoy!
