
How to make Giant Baked Beans.
Ingredients: Serves 2
- 400g of tinned butter beans
- 400g of chopped tomatoes
- 1 tbsp tomato puree
- 1 tbsp of sunflower oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1/2 tsp smoked paprika
- 1 tsp brown sugar
- 1 tbsp of soy sauce
- chopped parsley
Method:
- Heat the oil in a saucepan, and add the onion and garlic.
- Cook over a medium heat for 5 minutes until soft and translucent.
- Add the tomato purée, paprika, thyme, brown sugar and soy sauce, and cook for a couple more minutes.
- Add the beans and the chopped tomatoes, and simmer for at least 5 minutes, until the mixture is piping hot and the sauce has thickened a little.
- Season generously with black pepper.
- Serve and enjoy!
