Giant Baked Beans

How to make Giant Baked Beans.

Ingredients: Serves 2

  • 400g of tinned butter beans
  • 400g of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tbsp of sunflower oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp smoked paprika
  • 1 tsp brown sugar
  • 1 tbsp of soy sauce
  • chopped parsley

Method:

  1. Heat the oil in a saucepan, and add the onion and garlic.
  2. Cook over a medium heat for 5 minutes until soft and translucent.
  3. Add the tomato purée, paprika, thyme, brown sugar and soy sauce, and cook for a couple more minutes.
  4. Add the beans and the chopped tomatoes, and simmer for at least 5 minutes, until the mixture is piping hot and the sauce has thickened a little.
  5. Season generously with black pepper.
  6. Serve and enjoy!
