Fried Whitebait With Spicy Salsa

How to make Fried Whitebait With Spicy Salsa.

Ingredients: Serves 4.

300g/ 10oz Whitebait.

3 Tablespoon of Flour.

4 Tablespoon of Olive Oil.

4 Tablespoon of Sunflower Oil.

Salt and Pepper.

For the salsa:

1 Shallot, grated.

2 Garlic Gloves, crushed.

4 Ripe Tomatoes.

1 Small Red Chilli, de seeded and finely chopped.

1 Tablespoon of Fresh Parsley, finely chopped.

Olive Oil.

A Stale Piece of White Bread, grated into breadcrumbs.

1 Teaspoon of Paprika.

1 Teaspoon of Runny Honey.

Salt and Pepper.

1 Lemon, sliced into wedges.


  1. First make the salsa.
  2. Place the chopped tomatoes, shallot,garlic,chilli, olive oil, honey, and paprika into a small saucepan.
  3. Cover and cook on a very low heat for 10 minutes.
  4. Then season with salt and pepper.
  5. Stir in the fresh parsley.
  6. Set aside, but keep it warm.
  7. Preheat the oven to 150c/ 300f/ Gas 2.
  8. Wash the whitebait thoroughly and dry on kitchen paper.
  9. Spoon the flour onto a small plate.
  10. Season with salt and pepper.
  11. Dip the whitebait into the flour, dusting all sides, put on another plate.
  12. Heat the 8 tablespoons of olive oil and sunflower oil in a frying pan.
  13. Cook the fish in batches in the oil, until crispy and golden.
  14. After frying, place the fish on kitchen paper to obsorb excess oil.
  15. Then place the fish on a baking tray and keep warm while the remaining are cooked.
  16. When all the fish are ready, place them on a serving dish.
  17. Arrange the lemon slices around the fish.

Serve immediately with the spicy salsa.
