Fried Squid & Potatoes is a very simple dish to make, taking around 30 minutes and doesn´t require any special ingredients. These baby squid can either be bought fresh from your local fishmonger or frozen. I bought mine frozen from Lidl in Spain, though I´m not certain if they sell them in your country of residence. If buying them frozen then leave them to defrost overnight. When they are defrosted pat them with paper towels to take any left over water or else you will have the oil jumping everywhere once you cook them! You can also peel off the plastic bone found inside them, that way, once cooked and ready to serve, you will be able to enjoy them without the worry of finding the plastic bone to deal with!
INGREDIENTS: (for 2 people)
500g Baby squid
2 Large potatoes
Oil (vegetable or sunflower)
1: Cut the potatoes into large slices, add them to a cooking pot, add some salt and cover with water.
2: Boil until the potatoes are soft, check by pinching them with a knife, drain the water and place them back into the pot, cover with the lid and leave them to one side.
3: Grab a frying pan and cover the base with oil. Heat up on maximum and add the baby squid 2 or 3 at a time so that the oil doesn´t cool down and they end up boiling. Sprinkle some salt on each one and fry them on both sides for 2 to 3 minutes on each side.
4: Grab a serving dish and spread the potatoes on it. Place the baby squid on top and add the remaining oil from when you fried them, over the top of the squid and potatoes. Serve.
