Filipino Pork Hamonado

How to make a Filipino Pork Hamonado.

INGREDIENTS: Serves 8

  • 1 kg pork belly
  • 1 ½ cup pineapple juice
  • 1 cup pineapple chunks
  • 1 medium-sized onion (minced)
  • 3 cloves of garlic (minced)
  • 3 bay leaves
  • 1 teaspoon black pepper
  • ½ cup soy sauce
  • 2 tablespoons brown sugar
  • Salt to taste

DIRECTIONS:

  1. Prepare the pork belly and cut into serving pieces.
  2. Place the pork belly in a large bowl and add the pineapple juice and soy sauce.
  3. Mix well.
  4. Marinate for at least 1 hour.
  5. After marinating, separate the meat from the marinade.
  6. Reserve the marinade.
  7. Sear the pork cuts using high heat until oil has been rendered.
  8. Flip to sear the other side.
  9. Transfer the seared pork to a container.
  10. Sauté the onions and garlic for a few minutes.
  11. Add the seared pork belly and sauté.
  12. Add the reserved marinade.
  13. Add the black pepper, sugar and bay leaves.
  14. Stir until well-combined.
  15. Cover the pan and let it simmer using medium-low heat until the pork is tender.
  16. Stir occasionally while simmering.
  17. Check the tenderness of the pork using the fork test.
  18. Once tender, add the pineapple chunks.
  19. Season with salt.
  20. Stir well to combine.
  21. Simmer for a few minutes until the sauce is reduced.
  22. Serve with rice and enjoy!
