Dragon Chicken

How to make Dragon Chicken.

INGREDIENTS: Serves 2

  • 500 g chicken, boneless & cubed

For the Marination:

  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1/2 teaspoon Soy sauce
  • 1/2 teaspoon Pepper powder
  • Salt
  • 1 Egg
  • 1/4 cup Cornflour

For the Coating:

  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 teaspoon Red chilli powder
  • 4 tablespoons Tomato sauce
  • 1/2 teaspoon Sugar
  • Salt
  • 1 teaspoon Soy sauce
  • 2 tablespoons Spring onion, chopped
  • a few Cashew nuts, split (optional)

INSTRUCTIONS:

  1. Marinate the chicken pieces with the ginger and garlic paste, salt and pepper powder for at least 30 minutes.
  2. Add the egg and corn flour and mix well.
  3. Heat oil for deep frying.
  4. Drop the chicken pieces in batches and fry till golden brown.
  5. Drain onto an absorbent paper.
  6. Keep aside.
  7. Heat another pan.
  8. Add 2 tablespooons of oil.
  9. Add the ginger and garlic paste, and saute until the raw smell goes.
  10. Add the spring onion and saute for a few seconds.
  11. Reduce heat and add the chilli powder.
  12. Stir for a few seconds.
  13. Add the soy sauce, sugar and tomato sauce.
  14. Add the chicken pieces and cashew nuts and mix well until the chicken is well coated.
  15. Switch off the heat after a couple of minutes.
  16. Check and adjust the seasoning.
  17. Serve with rice.
