Cured Pork Shoulder & Potatoes

This is a very simple dish to make, taking around 40 minutes from start to finish. The cured pork shoulder can be bought in slices or you can buy a whole piece and cut it to your own liking. In the northwest part of Spain, the region called Galicia, this meat is called “Lacòn” and is usually served with “Grelos” which are turnip tops or turnip greens. Lacón con grelos is a typical dish from Galicia.

INGREDIENTS: (for 2 people)

400g Cured pork shoulder in slices

2 Large potatoes

3 Garlic cloves

1 Tbsp sweet paprika

Olive oil

Salt

Water

 

 

INSTRUCTIONS:

1: Cut the potatoes in thick slices and add them to a cooking pot, covering them with water. Add salt to your own liking and boil them until they are cooked. Drain the water and leave to one side.

2: Slice up the garlic.

3: Grab a frying pan and add 3 tbsp of olive oil. Heat up and add the slices of pork frying them both sides for a minute each side.

4: Grab a serving bowl and put the potatoes in it. Add the slices of pork on top.

5: In the same frying pan add the garlic and fry until golden brown. Then add the sweet paprika and 5cl of cold water. Bring to the boil and remove from heat.

6: Pour evenly over the pork and potatoes and then serve.
