Crispy Salmon Bites

How to make Crispy Salmon Bites.

INGREDIENTS: Makes 12

  • 1 lb salmon
  • 1/3 cup mayonnaise
  • 3 tablespoons dijon mustard
  • 1/4 cup chopped parsley
  • 1/3 cup panko breadcrumbs
  • dash of sea salt
  • dash of pepper
  • olive oil
  • 1 teaspoon chilli powder
  • 1 chia egg (1 tablespoons chia seeds + 3 tablespoons water mixed. Let it sit for 10 minutes)

METHOD:

  1. Pre-heat the oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. Season your salmon fillet with sea salt, pepper and olive oil.
  4. Bake at 400F for 7-8 minutes on each side.
  5. Once the fish is done allow it to cool down for 10 minutes.
  6. In a large mixing bowl add all of the above ingredients and mix until well combined.
  7. Roll into bite-sized balls.
  8. Place on your baking sheet lined with parchment paper.
  9. Bake at 400F for a total of 20 minutes.
  10. Flip after 10 minutes.
  11. The outside will begin to brown/crisp and the middle with be tender.
  12. Serve and enjoy!
