
How to make Cod In Tomato Sauce.
Ingredients: Serves 4
- 750g Fresh cod
- 250g Cockles
- 1 Tin of chopped tomatoes
- 2 Onions
- 2 Bay leaves
- 1 Red pepper
- 1 Green pepper
- 2 Garlic cloves
- 100 ml White wine
- 1 tsp Paprika
- Salt
- Black pepper
- Fish stock cube
- Olive oil
- Breadcrumbs
- Flour
Instructions:
- Firstly, put the cockles in cold water with a handful of salt to remove all the sand from inside.
- Change the water after 30 minutes and repeat the process a couple of times.
- Cut the cod into portions and pad dry the fish with a kitchen towel.
- Add salt and pepper to both sides.
- Make a mix with the same proportion of breadcrumbs and flour, stir and put aside.
- Peel and finely chop the garlic and onions.
- Wash and chop the peppers into cubes.
- Cover the bottom of a deep pot with olive oil and put at medium heat.
- While oil is heating up, pass the cod pieces in the mix with flour and breadcrumbs.
- Make sure the cod is fully covered with this mixture.
- Add to the pot and cook 4-5 minutes each side shaking the pot to prevent sticking.
- Remove the cod into a kitchen towel.
- In the same oil, add the garlic and cook it for 1 minute, then add the onion and cook it until translucent, stirring on and off.
- Toss the peppers in the pot and cook them for 5 minutes stirring occasionally.
- Add salt and pepper to taste.
- Toss the paprika and the bay leaves, stir continuously for a minute and then add the white wine and stir to prevent the paprika from burning.
- Allow the alcohol to evaporate.
- Add the chopped tomatoes to the pot and cook the sauce for 8-10 minutes stirring on and off and then, break the fish stock cube into pieces and add to the sauce.
- Also, add 100 ml of cold water and stir to incorporate all the ingredients.
- After the sauce is being cooked for 5-7 minutes, add the cockles and cook them until they are opened.
- Take them out of the pot and remove the shells.
- Keep them aside.
- Now add the cod into the sauce and shake the pot to cover them all in the sauce.
- From now on it is important that you don´t shake the food, only shake the pot to prevent the cod from breaking.
- If the sauce gets too thick, add a bit of water and shake the pot.
- Taste it and add any condiment if needed.
- Rest for 5-10 minutes and add the cockles.
- Serve and enjoy!
