Clams in Marinera sauce are on my top 3 favourite seafood dishes. Having lived in Galicia for many years I was shown how to make this delicious and very popular dish, and on here I will show you how to do it. And don´t forget to buy a nice loaf of crusty bread for dipping in the sauce as you will find it to be very tasty indeed! You are advised to use fresh clams but can also be done with frozen ones. If using frozen clams, there is no need to defrost them, as they will quickly defrost whilst being cooked. Please note, as with all shellfish, NEVER eat the ones that have not opened up during their cooking time!
INGREDIENTS: (for 2 people)
2 Garlic cloves
1 tsp Flour
1 tsp Sugar
1 tsp Sweet Paprika
1 Glass of white wine
1: Finely chop the onion and garlic.
2: Grab a large enough cooking pot for the clams and cover the base with olive oil. Add the onion and garlic. Gently fry until golden brown. Add the flour and stir well for a couple of minutes.
3: Peel the tomatoes, crush them and add them to the pot. Cover the pot and leave to cook for 5 minutes.
4: Add the sweet paprika, the parsley, a sprinkle of salt and the sugar. Also add the glass of wine. Leave to cook for around 10 minutes without the lid until the sauce thickens.
5: Add the clams, cover the pot and let it boil until the clams have opened up. Now uncover the pot and leave to cook for a few more minutes until the sauce has thickened up. When the sauce has thickened they are ready to serve.
