Chorizo & Chickpea Soup

How to make a Chorizo and Chickpea Soup.

Ingredients: Serves 4

  • 400g tin Chickpeas
  • 400g tin Tomatoes
  • 150g Chorizo Sausage, sliced
  • 1 Chard
  • 400ml Chicken Stock
  • 2 cloves Garlic, thinly sliced
  • 1 tbsp Olive Oil
  • Salt, to taste

Method:

  1. Heat the oil in a large pan over a medium heat and add the chopped chorizo, cook for 2 minutes or until slightly crisp.
  2. Reduce the heat and add the garlic, tomatoes, chickpeas, chicken stock, seasoning and bring to the boil.
  3. Reduce the heat and allow to simmer for 12 – 15 minutes, stirring occasionally.
  4. Wash the chard and cut into bitesize pieces, add to the soup and cook for a further 3 – 4 minutes.
  5. Remove from the heat and add some chopped parsley.
  6. Ladle the soup into serving bowls and serve immediately with some fresh crusty bread.
