INGREDIENTS: (for 2 people)

2 Chicken breasts

300g White rice

Olive oil

1 Small green pepper

100g Slices of red peppers in brine

1 Onion

3 Garlic cloves

Yellow food colourant

Salt

1 Chicken flavoured stock cube

Water

 

 

INSTRUCTIONS:

1: Cut the chicken into strips.

2: Finely chop the garlic, onion and green pepper.

3: In a deep frying pan add 3 tbsp of olive oil and heat up on high heat.

4: Add the chicken, green pepper, onion and garlic. Stir fry for 5 minutes.

5: Add 1 tsp of yellow food colourant, the chicken stock cube and salt to your own liking.

6: Add approximately 1 litre of water and stir well. Add the rice and the red peppers. Cook on medium to high heat until the water has evaporated, stirring ocassionally. Remove from heat and leave to stand for 5 minutes before serving.
