Chicken Meatballs

How to make Chicken Meatballs.

INGREDIENTS: Serves 4

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/3 cup shredded fontina or parmesan cheese
  • 1 clove garlic, minced
  • 2 tsp dried oregano
  • 1 jar marinara sauce
  • 3 tbs olive oil
  • 1 tsp salt, pepper to taste

INSTRUCTIONS:

  1. In a medium bowl, place ground chicken, bread crumbs, cheese, garlic, oregano, egg and salt.
  2. Mix and knead until smooth.
  3. Shape into 1-inch balls.
  4. Heat oil in pan and add meatballs (may need to do in two batches) until browned on all sides, approx 6 minutes per meatball.
  5. Turn heat to med-low and add marinara sauce, simmer for an additional 15 minutes.
  6. Serve over pasta.
